Hi, I have recently done the inevitable having a right foot out of lead and a Grand Vitara with a 1.9TDI conversion.
What is the best way of going about taking the front diff out?

In terms if lifting it out this is what I do.
1. Undo all the bolts, leaving one bolt loosely in place on each end of the diff to stop the diff dropping to the floor.
2. Put on an apron or some shirt that you don't mind ruining.
3. Get under the car with your chest under the diff. Undo the last two bolts and lower the diff onto your chest.
4. With the diff on your chest wiggle like a caterpillar to get out from under the car.
As for the order in which to undo things... I can't remember. I suppose you need to take our the drive shafts first, undo any peripherals like the breather hose, and then undo the bolts. You'll need a breaker bar if it's the first time you're removing the diff since the car was built. If you round the bolts (you should be fine it's not happened on any of my Vits) then some Irwin bolt extractors have saved me many times.

Just googled those bolt extractors and they look pretty handy!

jesus lol, looks like your right foot did a pretty good job of starting the removal process for you already
simple says tho..
remove the drive shafts,
loosen the bolt on the top of the crossmember under the third member
loosen all bolts on the brackets
there will be a breather hose(should be) on the top of the differential, undo this
remove all bolts (3 on the front drivers, 3 on the passanger, 1 in the crossmember), diff is relatively light but it will drop/pinch fingers etc., but do it oin somethjing as they hold oil in them and with that crack you are likely to lose some on the way down
Easier if you remove the front wheels.
you can, if you want a slightly easier job, remove the passanger shaft only (leave the drivers side in), and then with all the bolts on the differential removed, push teh whole thing across without removing the drivers side shaft first.. a little fiddly but done
