I am completly new to 4x4's as well as older cars just fyi.
I'm looking for a 4x4 to able to do the following things and wanted some advice on what may be the best choice.
Needs:
Large boot - suitable for 2 dogs (Akita's)
Decent ground clearence (although that should be covered by pretty much all 4x4's)
£5k max budget
Suitable for use with greenlaning
Reliable / OR / easy to fix by someone who has no more experience in mechanics than changing a headbulb
Would Like's: (not required but would be nice)
Low range gearbox (I probably do not need this but would be nice to have)
Decent MPG (will be used as day to day car as well so would like fuel costs to be resonable, am used to getting 20-30mpg so more would be fantastic, about the same would be ok)
So far I have been looking at all sorts but as I have no knowledge of them I have no idea what is a good deal. I do like the look of the big 4x4's though (Mitsubishi Pajero, Mitsubishi Shogun Sport, Landrover Discovery 2, Jeep Grand Cherokee)
Advice would be much appreciated.

All of the vehicles you mention should be suitable except perhaps the Jeep. Look for one with the least rust on critical structural and MoT fail points and availability plus price of spares. Also insurance cost can vary between various makes. Search through this and other forums for points to look for and common faults.
