You may well find that MT's dig in more than AT's.MT's are more open patterned that AT's which may well help them clear, especially if you are in a stop start situation.Gentle application of the throttle will lessen to a certain extent the chances of it digging in.

MT's handle OK going by the amount of people using them on the road, they want to be on the back
MT's are going to be OK, don't be giving it a bootfull of throttle when you pull off on sand or you could end up buried as MT do like to keep digging until they find a hard surface then they grip, for me driving on sand is like driving in snow, as in too much throttle could lead to problems.
Personally I'd go for the AT type rather than MT - I think that MTs would be too aggressive for sand.
Here's a list of tyre pattern types made by Insa Turbo, and what they can be used for. Seeing as Insa copy tyre treads of other manufacturers it should give you a fair idea of what you should be looking for.
In terms of tyre size, for sand you'd be looking at a wide tyre 14" at least for 100% 12.5 for a mix of road and sand

What you need is your tyre size against what tyre size patterns are made in before making you mind up.The Sahara Competicion you were looking at is only made in 5 sizes:
195/80R15.
205/70R15.
235/75R15.
205/80R16.
235/85R16.
The 'normal' Sahara comes in 11 different sizes.
195/80R15,205/70R15,205/80R15,215/75R15,235/80R15,30x9.50R15,31x10.50R15.
205/80R16,235/70R16,235/85R16,265/70R16.

I struggle to understand the points system they use on this website... if I read it right it says the "Traction Track" is as good as the "Special Track" in all conditions... but better on the road... is that true?
Considering they give a lot of the patterns a 5 on sand - which of these patterns is best on sand? From folks experience? ( I've seen special tracks "dig" in sand pretty convincingly - so I'm guessing not them)

I deal with a number of utility companies who use AT pattern tyres for mainly road based 4x4 vehicles, and MT pattern tyres on their off road based vehicles. Some of their vehicles running LSD rear ends run MT rear AT front to increase off road traction.
