Which ones do I buy, very confused.
Need it for winter driving on the road and once a month off roading.
Just cannot make my mind up? Please help.

What is your off-roading need?
I use ATs for towing a 2 tonne caravan on grass and can double up on them for green lanes on my daily
I also use MTs for green lanes and mild pay and play on my off-roader but use Insa special tracks for serious off-road stuff

I will need to buy some off road tyres (costing me a fortune on popping normal tyres)
Will Insa Turbo Special track 31 10.5 15 fit on my MK1 shogun LWB J Reg.
How are the sidewall protection on these tyres?
Will be using them for 4x4 playdays once a month (these tyres are cheaper than BFG mud terrain), therefore may as well get these if they fit.
The other option is to purchase some steel rims 16 inch
Then I can go for 235 85 16
Which will be better to get, the 16 inch tyre or the 15 inch tyre?

All terrains are generally better than muds for snow, heavy water etc.

This depends what you want to achieve.
AT's are either the BEST or WORST of all worlds, depending on your view point.
They can either go everywhere, or are rubbish at most things....
In the UK we get a lot of mud and grassy mud. AT's tend to not work well in such conditions.
A good set of MT's will be much better off road and 'comparable' on road. Although they will be nosier and wear quicker.
For a versatile MT's you'll want something with sipes in. Sipes will make it work better in the wet, the snow and the ice.
Many will claim AT's are better in snow, this is mostly due to sipes, as most AT's have these, but not all MT's do.
However in deep fresh snow, or snow over grass/mud, then MT's can be a better choice for such conditions.
For ***** & Prat sites, it depends on your aims. Aggressive MT's will allow you to go further, but tbh, as it's not a competition, I don't really see the need to be able to get as far as possible. Aggressive MT's generally won't ride very well on the road and doing so takes the edges off the lugs, so ruins them for off road use.
If you want some aggressive MT's, you are probably better off having a 2nd set of rims for them. But you'll then have to make the effort to swap them over.
A middle choice is to just go for a remould MT. Something like the Sahara/Macho pattern. It's essentially a copy of the Gealander MT pattern, although the remoulds tend to be a bit more aggressive with bigger lugs.
They won't excel in the ice or the wet, but they will be perfectly fine to use for most people in most conditions. They also work well off road for most uses and acceptable on road.
