Greetings one and all.
OK, it's Christmas morning - time to get the Brussels Sprouts on and here's my recipe:
Peel off the bitter outer leaves and plunge the prepared sprouts into a large saucepan of boiling water that has about a desert spoon full of salt and a generous pinch of cumin seed. Boil the sprouts until they are almost done just as you like them - don't overcook them until they are soft, grey and soggy, cook them so that they still have some firmness. Drain them ready for the next step (you can prepare the sprouts early and leave this step until you are ready to serve them). Melt a generous knob of butter in a pan and saute the sprouts in it. When the sprouts are nice and hot pour in a good splash of Madeira wine (or Port wine) and shake the pan around to get all the sprouts nicely coated. Then serve and enjoy.
And don't forget, cook lots more than you need for the meal so that you have enough left over to have that favourite Christmas Day game - the sprout eating contest to see who can eat the most.
