Just serviced the Defender and got to wondering why Evo 1 is a red colour, then thought why should Evo 2 be a golden brown colour. Why are oils different colours? Is it particular detergents, or for ID purposes or what?

Evo1 is red becuase it is actually an ATF and they are all red.
Evo2 is brown becuase it is oil and oil is brown.
They all end up black

Does ATF fluid get that dirty? I have manuals, so I don't have to worry about ATF fluid but was wondering. As far as motor oil, I've used synthetic for sports cars but never for my 4x4s. Would synthetic help any or be any better?

Fully synthetic is far better - you have to try it and you can feel the difference from the outset. Feels better, drives better and gives more oomph and mpg.
I replaced all the oils in my Disco - engine, auto box, trans box and diffs with Difflock shop oils - recommended.
Oh, and if the Evo oil in your auto box goes black or smells of burnt, have a word with your bank manager about a loan for some expensive repairs.
